Wild Pacific Northwest Ocean Run Surf Smelt
★ Crispy Pan-Fried Surf Smelt (Highly Recommended)
Rinse quickly under cold water and pat dry.
Season with sea salt and freshly ground black pepper.
Lightly dust with flour or potato starch.
Pan-fry over medium heat for 3–4 minutes per side until golden brown and crispy.
Finish with fresh lemon juice.
Japanese Tempura
Coat whole fish in a light tempura batter and fry until crisp.
Serve with tentsuyu dipping sauce and grated daikon.
Salt & Pepper Surf Smelt
Deep-fry until crispy.
Toss with garlic, scallions, fresh chili, sea salt and cracked black pepper.
Perfect with an ice-cold beer.
Charcoal Grilled
Brush lightly with olive oil.
