Thawing & Cooking
Remove scallops from vacuum packaging before thawing. Place in a covered container in the refrigerator overnight.
Before cooking, drain and pat thoroughly dry. Sear in a hot pan with a little oil, leaving space between each scallop. Finish with butter and a squeeze of lemon, and avoid overcooking.
Wine Pairing
Our suggested pairings: Chablis or a crisp, unoaked Chardonnay for simply seared scallops. Their bright acidity complements the scallops’ natural sweetness.
