Not Your Ordinary Scallops.
Most people have tasted scallops.
Very few have tasted Iceland Scallops.
Harvested from the cold waters of Atlantic Canada, Iceland Scallops (Chlamys islandica) are a completely different species from the larger Atlantic Sea Scallops commonly found in supermarkets.
Naturally smaller, sweeter, and prized for their delicate texture, they're considered a specialty throughout Northern Europe and Japan.
Each scallop is individually quick frozen (IQF) on the half shell with the roe (coral) and skirt left intact—preserving both their natural beauty and full ocean flavor.
Simple.
Elegant.
Worth discovering.
Why They're Different
Not bigger.
Not flashier.
Simply different.
Because Iceland Scallops are naturally smaller, they develop a wonderful balance between a lightly caramelized edge and a tender, juicy center.
Unlike many scallops sold with only the adductor muscle, these are presented exactly as nature intended—with the roe and skirt intact, offering additional sweetness, richness, and complexity appreciated by seafood lovers around the world.
Sometimes the most memorable ingredients aren't the ones everyone knows.
They're the ones waiting to be discovered.

Chef's Notes
• Do not overcook. Iceland Scallops cook quickly and are naturally tender.
• The natural juices released during cooking are packed with flavor. Spoon them over steamed rice or enjoy them with warm crusty bread.
• The orange coral (roe) is completely edible and considered a delicacy throughout Europe and Asia.
• Cook just until the scallops turn opaque while remaining juicy in the center.
