Harvested from the cold waters of Atlantic Canada, these wild scallops are naturally sweet, tender and wonderfully juicy. What makes them especially impressive is their exceptional scallop-to-shell ratio. This is not an oversized shell hiding a tiny piece of meat—each shell holds a beautifully plump and substantial scallop.
As they roast, their natural juices collect inside the shell. High heat gently caramelizes the edges while the center remains tender and succulent, creating an irresistible combination of delicate sweetness, ocean-fresh flavor and lightly browned richness.
Top them with Japanese mayonnaise and broil until bubbling and golden. Steam them with garlic and vermicelli, bake them with cheese, sear them in butter or place the half shells directly on the grill. They are remarkably easy to prepare and impressive enough for dinner parties, holiday meals and weekend cookouts.
